Marinated Coleslaw
Sometimes when you make something like this it actually tastes better the next day.
Ingredients
- 1 large head of cabbage, shredded (or get 2 of the "coleslaw cabbage in a bag").
- 1 onion, chopped fine. I like sweet onions but you can use anything.
- 1 large green bell pepper, chopped fine
- 1 stalk celery, chopped fine
- 1 1/2 cups sugar
- 1 cup cider vinegar
- 3/4 cup vegetable oil. (I prefer using about ½ cup. If you add an optional ingredient then go to 3/4).
- 1 tablespoon salt

OPTION: add 1 cup (or 2) of shredded carrot. Shred using the course side of a grater.
During the heating of the vinegar and oil, add a couple shakes of Franks hot sauce.
Directions
Combine cabbage, onion, pepper, celery, and sugar (and carrots if you want). Mix and set aside.
Combine vinegar, oil, and salt in a saucepan, and bring to a boil. (Add a few shakes of hot sauce if you want), Pour over cabbage mixture and stir well. Cover and refrigerate until ready to serve.
